CHOCOLATE MARSHMALLOW ICE CREAM SANDWICHES

10- Mini Twix bars
1- Chocolate cake mix
2- Eggs
1/4 C. Canola Oil
1/4 C. Water
2 C. Chocolate Ice Cream
2/3 C. Marshmallow Creme




1. Unwrap Twix bars. Place in plastic bag, freeze for 2 hours.
2. Prepare cookies. Preheat oven 350 degrees. Mix together Cake Mix, Eggs, Oil, and Water. Drop dough by rounded teaspoons onto ungreased cookie sheet. Bake for 10 minutes. Cool completely.
3. Spoon ice cream into large bowl. Let stand for 10 minutes to soften. Meanwhile, crush Twix bars. Stir into ice cream, return to freezer until ready to use.
4. Spread marshmallow creme on flat side of HALF of the cookies. Place creme side up on baking pan. Place scoop of ice cream mixture on the other HALF REMAINING cookies. Loosely cover and freeze until firm.
5. Gently sandwich cookies together. Can be used frozen for up to 1 month.
Makes about 14 cookies.
